** AWARDS ISSUED PRIOR TO JANUARY 20, 2025, WERE FUNDED UNDER PREVIOUS ADMINISTRATIONS AND MAY NOT REFLECT THE PRIORITIES AND POLICIES OF THE CURRENT ADMINISTRATION.** FLAVONOIDS ARE COMPOUNDS PLANTS PRODUCE TO PROTECT THEMSELVES AGAINST VARIOUS STRESSES THAT ARE EXPECTED TO BECOME MORE PROMINENT AS THE RESULT OF CLIMATE CHANGE. THIS INCLUDES ATTACK BY PATHOGENIC MICROBES, TEMPERATURE EXTREMES, AND UV RADIATION. SEVERAL FLAVONOIDS ARE ALSO OF INTEREST AS ANTI-CANCER DRUGS OR AS NUTRACEUTICALS - COMPOUNDS IN OUR FOOD THAT HAVE POSITIVE EFFECTS ON HEALTH, FOR EXAMPLE BY SLOWING DOWN THE EFFECTS OF AGING OR REDUCING THE RISK OF OBESITY. OF SPECIAL INTEREST WITH RESPECT TO THE LATTER TWO APPLICATIONS ARE 3-DEOXYANTHOCYANIDINS (3-DOA), WHICH THE CERAL CROP SORGHUM, BUT NOT THE OTHER CEREALS (E.G. MAIZE, WHEAT), CAN SYNTHESIZE, BUT WHOSE BIOSYNTHESIS IS NOT YET FULLY UNDERSTOOD. WE PROPOSE A DETAILED ANALYSIS OF HOW SORGHUM PLANTS PRODUCE FLAVONOIDS, AS THE BASIS FOR THE TAILORED PRODUCTION OF BIO-ACTIVE COMPOUNDS, I.E. PLANTS THAT PRODUCE SPECIFIC FLAVONOIDS, AND IN GREATER QUANTITY. THIS APPROACH RELIES ON A DETAILED ANALYSIS OF THE ENZYMES INVOLVED IN FLAVONOID BIOSYNTHESIS TO FIGURE OUT THEIR EXACT MODE OF ACTION. AS A NEXT STEP, THEIR PROPERTIES CAN BE MODIFIED.

** AWARDS ISSUED PRIOR TO JANUARY 20, 2025, WERE FUNDED UNDER PREVIOUS ADMINISTRATIONS AND MAY NOT REFLECT THE PRIORITIES AND POLICIES OF THE CURRENT ADMINISTRATION.** THE REDUCTION OF HEALTH RISKS RESULTING FROM POOR NUTRITIONAL BEHAVIOR IS ONE OF THE GREAT CHALLENGES OF MODERN WESTERN SOCIETIES. DIETS TOO HIGH IN CONSUMPTION OF SALT, FAT AND SUGAR ARE THE CONSEQUENCE OF POOR DIETARY PATTERNS. MALNUTRITION, WHICH INCLUDES OVERWEIGHT AND OBESITY, COSTS SOCIETY SEVERELY; IT STRAINS THE HEALTHCARE SYSTEM, NEGATIVELY IMPACTS QUALITY OF LIFE, AND LEADS TO A HOST OF NEGATIVE ECONOMIC OUTCOMES. ONE FACTOR THAT LEADS TO POOR FOOD CHOICES IS STRESS. RESEARCH SHOWS THAT HIGHER STRESS LEVELS CAUSE THE STRESS HORMONE, CORTISOL, TO INCREASE. AN INCREASE IN CORTISOL LEADS TO INCREASED APPETITE, POOR FOOD CHOICES, AND INCREASED CRAVINGS OF COMFORT FOOD CHARACTERIZED BY POOR NUTRITIONAL PROFILES. LOWER CORTISOL LEVELS ARE LINKED TO HEALTHIER FOOD CONSUMPTION. ONE WAY TO REDUCE CORTISOL IS MEDITATION, HENCE A QUANTIFICATION BETWEEN MEDITATION AND HEALTHY FOOD CONSUMPTION IS NEEDED. THUS, THE LONG-TERM GOAL OF THIS PROJECT IS TO IDENTIFY APPROACHES, SUCH AS MEDITATION, THAT RESULT IN HEALTHIER FOOD CONSUMPTION BEHAVIOR. SPECIFICALLY, THIS RESEARCH EXAMINES MEDITATION TECHNIQUES HYPOTHESIZED TO POSITIVELY IMPACT CONSUMPTION OF HEALTHY FOODS. THE MAIN OBJECTIVE IS TO DETERMINE WHETHER MEDITATION TECHNIQUES CAN LEAD TO HEALTHIER FOOD CHOICE AND CONSUMPTION BY LOWERING INDIVIDUALS' LEVELS OF PERCEIVED STRESS AND THE STRESS HORMONE CORTISOL. TO DO SO, A SERIES OF CONSUMER STUDIES IS CONDUCTED TO MEASURE THE EFFECT OF MEDITATION-INDUCED CHANGES IN CORTISOL ON FOOD CHOICE AND INTAKE, AND DETERMINING HEALTHY FOOD DIVERSITY AND RELATED DIETARY QUALITY. THE DEVELOPED MEDITATION TOOLS WILL BE MADE AVAILABLE TO THE PUBLIC AFTER TESTING.

LED BY CSUN AND LAMC FACULTY, THIS INNOVATIVE THREE-YEAR PROJECT WILL ALLOW 30 UNDERREPRESENTED LAMC STUDENTS TO COMPLETE A NEW NUTRITION AND FOOD SKILLS CERTIFICATE STARTING IN SPRING 2023. THIS NEW INDUSTRY-ACCEPTED CREDENTIAL WILL ALLOW STUDENTS TO WORK IN ENTRY-LEVEL JOBS IN THE FIELD OF NUTRITION AND FOODS SO THEY CAN EARN WHILE THEY LEARN AND COMPLETE THEIR ASSOCIATE DEGREE COURSEWORK TO CONTINUE TO MORE ADVANCED CAREERS IN NUTRITION/DIETETICS, FOOD SCIENCE, OR FOOD SERVICE MANAGEMENT.THIS PROJECT WILL ALSO ALLOW 30 CSUN NUTRITION STUDENTS TO SERVE AS PEER MENTORS TO THE LAMC STUDENTS.THE OVERALL GOAL OF THE PROJECT IS TO INCREASE DIVERSITY IN THE FIELD OF NUTRITION AND DIETETICS THROUGH WORKFORCE TRAINING. THE SUPPORTING OBJECTIVES INCLUDE: (1) INCREASE AWARENESS AMONG UNDERREPRESENTED HIGH SCHOOL AND FIRST-YEAR COLLEGE STUDENTS TO CAREERS AND EDUCATIONAL PATHWAYS IN NUTRITION AND FOODS; (2) RECRUIT UNDERREPRESENTED STUDENTS TO TAKE AND COMPLETE THE NUTRITION AND FOOD SKILLS CERTIFICATE; AND (3) INCREASE ENROLLMENT IN AND COMPLETION OF THE ASSOCIATE OF SCIENCE FOR TRANSFER (AS-T) DEGREE IN NUTRITION AND DIETETICS AMONG UNDERREPRESENTED STUDENTS. THE ACTIVITIES AND STRATEGIES PROPOSED TO ACHIEVE THESE OBJECTIVES INCLUDE: (1) OUTREACH TO HIGH SCHOOL AND COMMUNITY COLLEGE STUDENTS (2) PROFESSIONAL DEVELOPMENT AND TRAINING, (3) PEER MENTORSHIP, (4) FINANCIAL SUPPORTS, (5) COMPLETION OF INDUSTRY-ACCEPTED CREDENTIAL, (6) INTERNSHIP/JOB PLACEMENT WITH COMMUNITY PARTNERS.ABSTRACTTHE U.S. POPULATION IS BECOMING MORE RACIALLY AND ETHNICALLY DIVERSE YET THIS DIVERSITY IS NOT REFLECTED IN THE HEALTHCARE WORKFORCE. STUDIES HAVE SHOWN THAT WHEN A HEALTH CARE PROVIDER IS FROM THE SAME ETHNIC BACKGROUND AS THEIR PATIENT, THERE IS BETTER PATIENT COMPLIANCE AND IMPROVED HEALTH OUTCOMES. GIVEN THAT MINORITY GROUPS LIKE LATINOS AND AFRICAN AMERICANS EXPERIENCE A HIGHER PREVALENCE OF DIET-RELATED PROBLEMS LIKE OBESITY, DIABETES, AND HYPERTENSION, IT IS IMPERATIVE THAT THE NUTRITION AND DIETETICS WORKFORCE BETTER REFLECT ITS PATIENT BASE IN AN EFFORT TO REDUCE EXISTING HEALTH DISPARITIES. THE NUTRITION AND FOOD WORKFORCE PATHWAYS FOR UNDERREPRESENTED STUDENTS PROJECT AIMS TO EXPAND WORKFORCE AND CAREER PATHWAYS IN NUTRITION, DIETETICS, OR FOOD SCIENCE FOR UNDERREPRESENTED STUDENTS. THEY MAY FUNCTION AS VITAMIN A PRECURSORS, HAVE IMPORTANT ANTIOXIDANT, IMMUNOLOGICAL, OR MEDIATE METABOLIC FUNCTIONS. ABSORPTION OF CAROTENOIDS TAKES PLACE IN THE SMALL INTESTINE, BUT THE OVERALL ABSORPTION EFFICIENCY FROM WHOLE FOODS IS LOW (~5-20%) AT THE LEVEL OF THE SMALL INTESTINE, AND THE REMAINING UNABSORBED CAROTENOIDS MOVE INTO THE COLON. HERE, CAROTENOIDS CAN BE FURTHER RELEASED AND METABOLIZED WITHIN THE COLON OR WITHIN COLON EPITHELIAL CELLS. THE OVERALL OBJECTIVE OF THIS PROPOSAL IS TO DETERMINE THE IMPACT OF CAROTENOIDS ON OBESITY-ASSOCIATED GUT DYSFUNCTION AND GUT MICROBIOTA. OUR CENTRAL HYPOTHESIS IS THAT CAROTENOIDS ESCAPING THE ABSORPTION IN THE SMALL INTESTINE CAN BE TRANSFORMED BY THE GUT MICROBIOTA IN THE COLON, AND THESE UNDIGESTED CAROTENOIDS ARE AVAILABLE TO THE GUT EPITHELIUM AND PROTECT AGAINST OBESITY-ASSOCIATED GUT DYSFUNCTION. WE WILL ELUCIDATE THE MOLECULAR MECHANISMS OF ACTION OF MAJOR DIETARY CAROTENOIDS ON INFLAMMATORY TRANSCRIPTION FACTORS AND GUT BARRIER INTEGRITY IN COLONIC EPITHELIAL CELLS IN AIM 1. WE WILL DETERMINE THE IMPACT OF CAROTENOIDS ON OBESITY-ASSOCIATED GUT DYSFUNCTIONIN A DIET-INDUCED OBESITY ANIMAL MODEL IN AIM 2. WE WILL CHARACTERIZE DIET-INDUCED CHANGES IN THE GUT MICROBIOTA RESULTING FROM A CAROTENOID-RICH DIET, UTILIZING SYSTEMS BIOLOGY APPROACHESIN AIM 3. WE BELIEVE THAT THE RESULTS OF THIS STUDY WILL INCREASE THE DEMAND FOR CAROTENOID-RICH PLANTS. FINALLY, THE FINDINGS OF THIS PROPOSAL WILL BE TRANSLATED TO THE COMMERCIAL USE OF PLANTS RICH IN CAROTENOIDS.

**AWARDS ISSUED PRIOR TO JANUARY 20, 2025, WERE FUNDED UNDER PREVIOUS ADMINISTRATIONS AND MAY NOT REFLECT THE PRIORITIES AND POLICIES OF THE CURRENT ADMINISTRATION.** KNOWLEDGE OF SOIL-LANDSCAPE SYSTEMS ARE KEY FOR ADVANCING AGRICULTURE AND SOCIETY AND THERE IS CURRENTLY A CRITICAL NEED TO COUPLE TRADITIONAL ECOLOGICAL KNOWLEDGE (TEK) AND DIGITAL TOOLS FOR SUSTAINABLE AGRICULTURAL MANAGEMENT ON NATIVE AMERICAN TRIBAL LANDS. TRIBAL RESERVATIONS HAVE VERY LIMITED SOIL INFORMATION AND ACCESS TO CONSERVATION PROGRAMS PROVIDED TO OTHER PRODUCERS IN THE U.S. THESE COMMUNITIES FACE ADVERSE SOCIOECONOMIC FACTORS SUCH AS EXTREME POVERTY AND HIGH INCIDENCE OF DIABETES, OBESITY, AND HEART DISEASE, ALL OF WHICH ARE LINKED TO FOOD INSECURITY. SINCE COVID-19 AND RECENT CLIMATE CHANGE PERTURBATIONS, THESE PERVASIVE ISSUES HAVE WORSENED AND ADAPTIVE TOOLS FOR ADDRESSING FOOD INSECURITY ON TRIBAL LANDS ARE URGENTLY NEEDED. THERE IS A NEED TO CLOSE THE AGRICULTURAL TECHNOLOGY AND DATA GAP, PARTICULARLY FOR BASIC SOIL INFORMATION TO MANAGE WATER TO IMPROVE AGRICULTURAL PRODUCTIVITY ON TRIBAL LANDS. THIS PROJECT WILL ADVANCE RESEARCH ON THE SAN CARLOS AND NAVAJO TRIBAL LANDS FOR PROMOTING HEALTHY SOILS AND FOOD SYSTEMS ON NATIVE AMERICAN LANDS. SOILS VARY ACROSS LANDSCAPES AND FUNCTION BASED ON INHERENT PROPERTIES. BECAUSE OF THIS, TRADITIONAL SOIL MAPS DO NOT TRANSLATE FUNCTIONAL PROPERTIES - NECESSARY FOR OPTIMIZING LAND USE. THE PROPOSED, INNOVATIVE DIGITAL SOIL MAPPING PROCESS, KNOWN AS KNOWLEDGE-BASED INFERENCE MAPPING IS IDEAL FOR AREAS WITH LIMITED DATA AND PROVIDES FIELD-TO-NATION SCALE INFORMATION. THIS PROJECT WILL PROVIDE THE FIRST EVER HIGH-RESOLUTION SOIL MAPS AND INTERPRETATIONS ON TRIBAL LANDS BY LINKING DATA AND TEK VIA DIGITAL SOIL MAPS THAT WILL BE AVAILABLE THROUGH AN APP AND DELIVERED TO TRIBAL PRODUCERS FOR PROMOTING WATER AND NUTRIENT-EFFICIENT AGRICULTURE. ULTIMATELY, THIS RESEARCH WILL INTEGRATE FUNCTIONAL SOIL MAPS FOR CULTURALLY IMPORTANT AGROECOLOGICAL SYSTEMS THAT REALIZE OPTIMUM RETURNS AND ACCOMPLISH CONSERVATION GOALS FOR AGRICULTURAL RESOURCE MANAGEMENT PLANS ON TRIBAL LANDS. THE PROPOSED RESEARCH WILL ALSO PROVIDEFOUNDATIONAL INFORMATION FOR FUTURE RESEARCH THAT ADVANCE TECHNOLOGY-USE ON TRIBAL LANDS. THROUGH INTENSIVE TRAINING WORKSHOPS, THIS PROJECT WILL INCREASE NATIVE AMERICAN STUDENTS IN AGRICULTURE AND GIVE BACK TO THEIR TRIBAL COMMUNITIES FOR PROMOTING THE PRODUCTION OF HEALTHY, SUSTAINABLE, AND NUTRITIVE FOODS BY INTEGRATING MODERN TECHNOLOGIES. THROUGH SPURRING WATER AND NUTRIENT EFFICIENT AGRICULTURE, THESE TECHNOLOGIES WILL ADVANCE SYSTEM INNOVATION TOWARDS PRACTICES THAT PROMOTE HEALTHY SOILS ON TRIBAL SOILS.

RESEARCH FROM OUR LABORATORY AND OTHERS HAVE SHOWN THAT DIETARY COCOA CAN MITIGATE OBESITY-RELATED INFLAMMATION AND NON-ALCOHOLIC FATTY LIVER DISEASE (NAFLD). THE EFFECTS ARE RELATED TO IMPROVED GUT HEALTH. OUR RESEARCH TEAM RECENTLY PUBLISHED TWO PAPERS SHOWING SIGNIFICANT DIFFERENCES IN THE RESPONSE OF OBESE MICE TO DIETARY COCOA BASED ON SEX. PRIOR STUDIES HAVE REPORTED THAT SEX AND SEX HORMONES CAN IMPACT DEVELOPMENT OF NAFLD AND OTHER CO-MORBIDITIES OF OBESITY IN GUTMICROBIOTA-DEPENDENT AND INDEPENDENT WAYS. BASED ON THIS, WE HYPOTHESIZE THAT DIETARY COCOA MITIGATES INFLAMMATION AND NAFLD IN OBESE MICE IN A SEX-SPECIFIC MANNER, AND THAT THE INFLUENCE OF SEX HORMONES ON THE COMPOSITION OF THE GUT MICROBIOME AND MAMMALIAN SIGNALING PATHWAYS DRIVE THESE DIFFERENCES IN BIOLOGICAL RESPONSE. WE WILLCHARACTERIZE THE SEX-SPECIFIC BENEFICIAL EFFECTS OF COCOA AGAINST OBESITY-RELATED ENTEROHEPATIC INFLAMMATION AND FATTY LIVER DISEASE. ADDITIONALLY, WE WILLCHARACTERIZE THE ROLE OF THE GUTMICROBIOME IN MEDIATING THE SEX-SPECIFIC EFFECTS OF COCOA AGAINST OBESITY-RELATED INFLAMMATION AND LIVER DISEASE.THESE STUDIES WILL PROVIDE GREATER INSIGHT INTO THE ANTI-INFLAMMATORY AND ENTEROHEPATIC PROTECTIVE ACTIVITY OF COCOA, AND THE IMPACT OF SEX AS MODERATOR.
