IMPROVING LISTERIA CONTROL AND SANITATION PRACTICES IN VERY SMALL/SMALL MEAT PROCESSING FACILITIES IS A CRITICAL NEED. PREVENTING LISTERIA MONOCYTOGENES CONTAMINATION INSIDE A FACILITY IS DIFFICULT, BECAUSE IT GROWS AT COLD TEMPERATURES, PRODUCES BIOFILM, AND MODERATELY RESISTS SANITIZERS. PSEUDOMONAS IS COMMON BACTERIA FOUND IN FOOD THAT IS INCREASINGLY IDENTIFIED TO ASSIST LISTERIA SURVIVAL IN THE MEAT PROCESSING ENVIRONMENT. ENVIRONMENTAL SAMPLES FROM VERY SMALL/SMALL FACILITIES WILL BE COLLECTED TO IDENTIFY BACTERIAL CONTAMINATION SITES. LISTERIA AND PSEUDOMONAS WILL BE GROWN, AND BIOFILM AND SANITIZER EFFECTIVENESS WILL BE ASSESSED. TO IDENTIFY POTENTIAL ISSUES IN THE SANITATION TRAINING ACTIVITIES IN PROCESSING PLANTS, VERY SMALL/SMALL MEAT PROCESSING EMPLOYEES WILL BE SURVEYED, AND A SANITATION TRAINING VIDEO WILL BE DEVELOPED AND SHARED BASED ON THE FINDINGS. THE STUDY WILL ADVANCE THE UNDERSTANDING OF LISTERIA AND PSEUDOMONAS SURVIVAL IN VERY SMALL/SMALL MEAT PROCESSING ENVIRONMENTS AND RESULT IN TRAINING MATERIALS TO BE FREELY DISTRIBUTED TO THE MEAT INDUSTRY.
