THE TEXAS A&M AGRILIFE EXTENSION PORK PROGRAM ADDRESSES A PRESSING ISSUE: THE NEED FOR GREATER CONSUMER UNDERSTANDING OF PORK AS A NUTRITIOUS, AFFORDABLE, AND ENVIRONMENTALLY SUSTAINABLE PROTEIN SOURCE. AS FOOD PRICES RISE, MANY FAMILIES LOOK FOR COST EFFECTIVE ALTERNATIVES TO TRADITIONAL PROTEINS LIKE BEEF. PORK IS AN EXCELLENT OPTION, OFFERING HIGH-QUALITY PROTEIN WITH LOW LEVELS OF SATURATED FAT, YET IT IS UNDERUTILIZED BY YOUNGER GENERATIONS AND OFTEN MISUNDERSTOOD IN TERMS OF ITS NUTRITIONAL VALUE, SAFETY, AND PREPARATION METHODS. BY BRIDGING KNOWLEDGE GAPS AMONG CONSUMERS AND EMPOWERING EXTENSION AGENTS TO EFFECTIVELY COMMUNICATE PORK'S BENEFITS, THIS PROJECT CONTRIBUTES TO BETTER-INFORMED DIETARY CHOICES, AND ECONOMIC SAVINGS FOR FAMILIES.TO ADDRESS THESE CHALLENGES, THE PROGRAM WILL EMPLOY A STRUCTURED EDUCATIONAL APPROACH. SURVEYS WILL FIRST IDENTIFY KNOWLEDGE GAPS AMONG EXTENSION AGENTS REGARDING PORK PRODUCTION, PROCESSING, AND HEALTH BENEFITS. BASED ON THIS DATA, ENGAGING ONLINE EDUCATIONAL MATERIALS WILL BE DEVELOPED AND DEPLOYED VIA THE TEXAS A&M AGRILIFE ASPIRE PLATFORM. THESE MATERIALS WILL INCLUDE VIDEO DEMONSTRATIONS, INTERACTIVE LESSONS, AND PRACTICAL RESOURCES SUCH AS PREPARATION TIPS AND RECIPES. THE PROGRAM ALSO LEVERAGES REAL-WORLD EXAMPLES, SUCH AS VIRTUAL FACILITY TOURS AND COOKING DEMONSTRATIONS, TO MAKE THE CONTENT AVAILABLE AND IMPACTFUL. EXTENSION AGENTS WILL COMPLETE THE TRAINING AND INCORPORATE THE MATERIALS INTO THEIR OUTREACH, REACHING AUDIENCES ACROSS TEXAS AND BEYOND.THIS PROJECT ULTIMATELY AIMS TO INCREASE CONSUMER CONFIDENCE IN PORK AS A HEALTHY, VERSATILE, AND ENVIRONMENTALLY FRIENDLY PROTEIN CHOICE. BY ENHANCING EXTENSION AGENTS' KNOWLEDGE AND EQUIPPING THEM WITH EFFECTIVE TOOLS, THE PROGRAM ASPIRES TO DRIVE SIGNIFICANT CHANGES IN CONSUMER BEHAVIOR, LEADING TO INCREASED PORK CONSUMPTION AND ECONOMIC GROWTH FOR THE PORK INDUSTRY. THE SOCIETAL BENEFITS INCLUDE IMPROVED PUBLIC HEALTH THROUGH BETTER DIETARY CHOICES, AND A MORE SUSTAINABLE PROTEIN SUPPLY CHAIN. IN THE LONG TERM, THIS PROJECT LAYS THE FOUNDATION FOR A MORE INFORMED AND EMPOWERED COMMUNITY CAPABLE OF MAKING CHOICES THAT BENEFIT THEIR FAMILIES, AND THE AGRICULTURAL SECTOR.
