OUTBREAK DATA SHOWSTHAT GROUND TURKEY IS A COMMON SOURCE OFSALMONELLAINFECTIONS IN THE UNITED STATES.THIS HAS MOTIVATED CONSUMER GROUPS TO REQUEST ACTION FROM USDA-FSIS REGARDING THE IDENTIFICATION OFPRE-HARVEST APPROACHES FOR REDUCINGSALMONELLAIN POULTRY (CONSUMER REPORTS, 2021). CURRENTLY, THERE IS LITTLEUNDERSTANDING OFPRE-HARVESTSALMONELLATESTING METHODS ANDTHE USE OFQUANTIFICATIONMETHODS FOR PREDICTING GROUND TURKEY TEST-RESULTS.ADDITIONALLY, THE TURKEY INDUSTRY DOES NOT HAVE AN ESTABLISHED METRIC FOR PREDICTING GROUND TURKEYTEST-RESULTS. IN COMPARISON, THE GROUND BEEF INDUSTRY HAS USED N60 TESTING FORESCHERICHIA COLIO157:H7 SINCE THE EARLY 2000'S. ALTHOUGH THIS EXACT METHOD IS NOT APPROPRIATE FOR GROUND POULTRY PRODUCTS, THE CONCEPTOF USING A TESTING METHODOLOGY TO DIVERT PRODUCT PRIOR TO GRIND HOLDS SIGNIFICANT PROMISE IN REDUCINGSALMONELLAIN GROUND POULTRY PRODUCTS. THIS PROJECT HAS BEEN DESIGNEDTO IDENTIFY A SAMPLING METHOD FORTURKEY PRE-HARVEST THAT WILL RELY ON QUANTIFICATION METHODS TOACCURATELYESTIMATESALMONELLACONTAMINATION IN GROUNDTURKEY. THIS PROJECTWILL PROVIDE DATA TO SUPPORT THE DESIGN OF EFFECTIVE DIVERSION PROGRAM TO CONTROL ANDREDUCESALMONELLACONTAMINATION IN GROUND TURKEY, WHICH WILLREDUCE THE PUBLIC HEALTH BURDEN DUE TOSALMONELLACONTAMINATION OF GROUND TURKEY.
