DIFFERENT CHRONIC DISEASES SUCH AS CARDIOMETABOLIC DISORDERS (CMD) ARE STRONGLY ASSOCIATED WITH DIETARY HABITS, PARTICULARLY THOSE ASSOCIATED WITH HIGHLY CALORIC AND PROCESSED FOODS FROM THE AMERICAN DIET, ALSO KNOWN AS THE WESTERN DIET (WD). (MONTEIRO, CANNON, LAWRENCE, COSTA LOUZADA, & PEREIRA MACHADO, 2019). THEIR CONSUMPTION HAS INCREASED IN THE LAST DECADE (JUUL, MARTINEZ-STEELE, PAREKH, MONTEIRO, & CHANG, 2018; SETYOWATI, ANDARWULAN, & GIRIWONO, 2018) MOSTLY BECAUSE OF THEIR CONVENIENT PRICE AND FAST PRODUCTION. IN GENERAL, UPFS IN WD ARE OBTAINED FROM THE FAST FOOD (FF) INDUSTRY READY-TO-EAT (RTE) PRODUCTS. EVEN THOUGH THE MARKET IS MODIFYING THEIR MENUS TO PROVIDE THE CONSUMER HEALTHIER MEAL OPTIONS, THESE CHANGES INCREASED THE PRESENCE OF OTHER SPECIES THAT HAVE NOT BEEN FULLY STUDIED. THIS IS THE CASE OF CHOLESTEROL AND PHYTOSTEROLS WHICH GENERATE A GROUP OF DIETARY OXIDIZED STEROLS (DOSS) CAUSED BY THERMAL TREATMENTS, LIGHT EXPOSURE, STORAGE, AND AGING OF FOOD. DOSS CAN CAUSE PRO-INFLAMMATORY, PRO-OXIDANT, AND OTHER ADVERSE EFFECTS, AND SEVERAL CHRONIC DISEASES SUCH AS METABOLIC SYNDROME, ATHEROSCLEROSIS, DIABETES TYPE 2, AND OBESITY HAVE BEEN LINKED TO DOSS. DESPITE THEIR RELATIONSHIP WITH MAJOR CHRONIC DISEASES, THE ABSORPTION, EXCRETION, GUT METABOLISM, AND TRANSPORT OF DOSS HAS BEEN POORLY STUDIED. THEREFORE, THE NUTRITIONAL QUALITY OF THE WD NEEDS TO BE FURTHER STUDIED AND IMPROVED. THE INTERACTION BETWEEN PHENOLICS AND DOSS FROM UPF WITHIN THE WD IS STILL UNKNOW; AND THEIR RISK/BENEFITS ON HUMAN HEALTH SHOULD BE EVALUATED. FURTHERMORE, AN EXPOSURE ASSESSMENT OF THESE COMPOUNDS HAS NOT BEEN DONE DUE TO THE LACK OF DOSE-RESPONSE STUDIES.THE MOST CONSUMED UPFS BY THE US POPULATION WILL BE COLLECTED FROM DIFFERENT SUPERMARKET AND FF FRANCHISES. UPFS WILL BE TESTED TO DETERMINE THE PHENOLICS AND DOSS CONTENTS BY MEANS OF HIGH THROUGHPUT TECHNIQUES. THEN, A COMPLETE DATABASE OF DOSS WILL BE CREATED AND ACCESSIBLE TO THE PUBLIC. RESULTS WILL BE PUBLISHED IN PEER REVIEWED HIGH IMPACT JOURNALS AND AVAILABLE FOR THE SCIENTIFIC COMMUNITY. ADDITIONALLY, AUDIO-VISUAL MATERIAL WILL BE CREATED AND SHARED THROUGH DIFFERENT SOCIAL MEDIA ACCOUNTS TO ENSURE REACHING AS MANY PEOPLE AS POSSIBLE. IN GENERAL, THIS PROJECT WILL ENHANCE THE CURRENT NUTRITIONAL INFORMATION OF FOOD PRODUCTS PROVIDED TO THE CONSUMERS, BY GENERATING EVIDENCE OF THE PRESENCE OF DOSS AND THEIR RELATIONSHIP WITH CHRONIC DISEASES, SPECIFICALLY, CARDIOMETABOLIC DISORDER. A COMPLETE PROFILE OF THE PHENOLICS AND THE OVERALL ANTIOXIDANT LOAD OF THE MOST CONSUMED UPFS IN THE WD WILL BE DEVELOPED AND SHARED WITH THE PUBLIC. NOVEL INFORMATION REGARDING THE RELATIONSHIP OF THESE COMPOUNDS AND HUMAN HEALTH WILL BE PROVIDED AT THE COMPLETION OF THIS PROJECT. THEREFORE, IT IS EXPECTED TO IMPACT THE FOOD INDUSTRY BY PROVIDING NOVEL INFORMATION ABOUT THE DOS CONTENT IN UPFS ACCORDING TO DIFFERENT FOOD TECHNOLOGIES, THE ENTIRE US POPULATION BY PROVIDING NEW AND CRITICAL NUTRITIONAL AND HEALTH KNOWLEDGE REGARDING FOOD SAFETY THAT WILL ENSURE US CITIZENS' WELL-BEING.
