WHEAT IS THE PRIMARY SOURCE OF CALORIES AND PROTEIN IN MANY DIETS WORLDWIDE. THE NUMBER OF INDIVIDUALS SUFFERING FROM INADEQUATE MINERAL INTAKE, KNOWN AS 'HIDDEN HUNGER', IS EXPECTED TO INCREASE WITH THE NEGATIVE EFFECTS OF RISING ATMOSPHERIC CO2 ON GRAIN MINERAL CONCENTRATION. BREEDING WHEAT FOR INCREASED GRAIN MINERALS (I.E. BIOFORTIFICATION) AND IMPROVED PROCESSING IN THE HUMAN BODY ARE SUSTAINABLE APPROACHES TO IMPROVE HUMAN HEALTH AND WELL-BEING. VARIATION FOR MINERAL NUTRITION EXISTS IN WHEAT VARIETIES CURRENTLY GROWN, OLDER WHEAT VARIETIES, AND ALSO WILD WHEAT RELATIVES. WE WILL EXPLOIT THIS VARIATION TO IMPROVE THE NUTRITIONAL VALUE OF WHOLE GRAIN PRODUCTS BY USING TRADITIONAL PRACTICIES AIDED BY CUTTING-EDGE TECHNOLOGY FOR ASSESSING MINERAL NUTRITION AND SELECTING THE BEST WHEAT VARIETIES. OUR GOAL IS TO USE THE PLANT BREEDING STRATEGIES TO ENHANCE THE NUTRITIONAL VALUE OF WHEAT.
