FOOD ALLERGIES ARE CHRONIC DISEASES WITH TREMENDOUS PHYSICAL, PSYCHOLOGICAL, AND FINANCIAL IMPACTS ON FOOD-ALLERGIC INDIVIDUALS AND FAMILIES, WITH RECENT ESTIMATES OF THE ECONOMIC COSTS OF CHILDHOOD FOOD ALLERGIES IN THE U.S. REACHING $24.8 BILLION ANNUALLY. FOR THE MILLIONS OF AMERICANS THAT SUFFER FROM FOOD ALLERGIES, UNDECLARED FOOD ALLERGENS ARE POTENTIALLY LIFE-THREATENING FOODBORNE CONTAMINANTS THAT MUST BE CONTROLLED BY FOOD MANUFACTURERS. ROBUST AND SENSITIVE QUANTITATIVE FOOD ALLERGEN METHODS ARE CRITICAL TO ENSURE FOOD SAFETY AND ARE NECESSARY TO IMPROVE FOOD ALLERGEN LABELING AND MANAGEMENT THROUGH THE USE OF RISK-BASED PRACTICES.THIS PROJECT WILL DEVELOP NEW WAYS OF DETECTING FOOD ALLERGENS. THESE METHODS WILL BE DESIGNED TO FUNCTION IN A WIDE VARIETY OF CIRCUMSTANCES IN WHICH A FOOD ALLERGEN MIGHT BE PRESENT. HOW THESE METHODS ARE USED TO EVALUATE THE RISK THAT A FOOD ALLERGEN POSES WILL ALSO BE EXAMINED.THIS WORK WILL FOCUS ON FOOD ALLERGENS, AND PLACES IN WHICH THEY MIGHT BE FOUND, THAT POSE A PROBLEM FOR THE CURRENT EXISTING METHODS. BECAUSE OF THIS, FOOD MANUFACTURERS AND ALLERGIC CONSUMERS WILL HAVE MORE CONFIDENCE THAT UNLABELED FOOD ALLERGEN RISKS ARE LESS COMMON.
