A MAJOR INFLUENCE IN LIFESTYLES IF THE FOOD WE EAT. AS WAS SAID BY HIPPOCRATES 2500 YEARS AGO FOOD IS MEDICINE. BY COMPLETING THIS COMPREHENSIVE, SYSTEMATIC STUDY, WE WILL DEMONSTRATE FOR THE FIRST TIME HOW CONSUMING DIETS WITH CARBOHYDRATES WHICH BREAK DOWN DIFFERENTLY MAY HAVE AN EFFECT ON INFLAMMATION, INTEGRITY AND FUNCTION OF THE RETINA AS WE AGE, THE BODY'S ABILITY TO DEFEND ITSELF FROM DAMAGE CAUSED BY FREE RADICALS, THE BODY'S COLLECTION OF METABOLITES, AND THE BODY'S COLLECTION OF MICRO-ORGANISMS.
